Cube Steak - Wait - Keep reading, it's good, I promise!!

Every few months my family buys a freezer full of meats from a local small grocer.  I find it is cheaper this way, and it has the side benefit of making me try out new recipes!

Each freezer pack comes with cube steak - something I personally find - well, icky.  I've tried several things with it - and it's always a chewy stringy mess.  Then I found this recipe: http://allrecipes.com/Recipe/Cube-Steak-Parmesan/Detail.aspx  YUM!!!!

I substituted their sauce for my family's favorite jar sauce, and skipped the oregano on top (because heaven forbid the children see little specks of things in the cheese!!) - but otherwise followed the directions as written.  I can't even begin to tell  you how good this tasted.  It didn't taste like regular cubesteak at all.  And all my kids ate it!!  This was huge, because I have some seriously picky eaters.    The meal was also really filling, and fed our family twice.

  1. Sorry for my ignorance, but is cube steak the same as stew beef? If so, I have a great recipe for vegetable beef stew in a crock pot that makes the meat very tender and juicy. I find that the crock pot with broth or gravy is a great way to make meat tender. Looking forward to trying this recipe.

  2. No, it's kinda like chewy stringy ground beef - it's hard to describe. You can find it in the ground beef or steak area. I would love to have your recipe for beef stew!! :) I always love to try new things - even if the kids don't always appreciate it!! :)

  3. Beef Soup:
    1 pound stew beef (any beef would probably work)
    8 cups water
    8 beef bouillon cubes (1 per cup of water; could use beef broth instead of these and the water)
    1 envelope onion soup mix
    dash of Italian seasoning
    dash of garlic (I never have fresh on hand when I want it)
    half an onion, chopped
    half a green pepper, chopped
    1 cup carrots, chopped
    1/2 cup celery, chopped (we use less because I don't like it as much)
    1-2 cups potatoes, diced
    Put it all in the crock pot and do 4-6 hours on high or 8-10 on low, till meat is done and veggies are soft. This makes a good, very flavorful soup. You can adjust just about anything to make it to your taste. I usually make egg noodles or rice to eat with it. If I cook them separately, I can make more of the soup. It usually tastes better on the 2nd or 3rd day. I hope you enjoy it. My boys at least eat the broth over the rice/noodles and some of the veggies.
